The patented infrared cooking system which is featured by our patented grates used by Char Broil in the 463270611/12 grill as well as other IR models at Orchard Supply Hardware, creates an "oxygen free zone" for cooking. Because infrared technology heats using radiant rather than convective heat (which is what most gas grills use), you can do some unique things such as putting wood chips directly on the grates (in the "oxygen free zone"). Since flames or fire require oxygen, and the patented IR grates effectively remove oxygen from the equation, the wood chips will smoke rather than catch fire so you can add flavor to your food without the use of a dedicated smoker box. At the same time, the Infrared grills from Char Broil can be used with smoker box, but it is not required.
